- 1 cup unsalted butter, regular or browned if desired
- 1 cup sugar
- 1 cup packed brown sugar
- 1 cup pumpkin puree
- 2 teaspoons vanilla extract
- 1/2 teaspoon kosher salt
- 1 large egg
- 2 cups all purpose flour
- 1 teaspoon baking powder
- 1 tablespoon pumpkin pie spice
- 1 1/2 cups chocolate chips
- 7 ounces marshmallow fluff

Method
- Step 1Preheat the oven to 350°F. Spray a baking pan with nonstick spray, or line it with parchment paper.
- Step 2In a medium bowl, mix together the flour, baking powder, and pumpkin spice. Set aside.
- Step 3In a large mixing bowl, combine the melted butter and both sugars until well combined.
- Step 4Add in the egg, pumpkin puree, vanilla, and 1/2 teaspoon of kosher salt. Mix until well combined.
- Step 5Sift in the flour mixture and stir until just combined. Be careful not to over mix.
- Step 6Pour about 1/3-1/2 of the batter into the prepared pan and spread it to the edges.
- Step 7Add a generous layer of chocolate and marshmallow fluff on top of the batter.
- Step 8Spread the rest of the batter on top to cover the chocolate and marshmallow layers.
- Step 9Bake for about 45-50 minutes. The bars are done when a toothpick inserted into the center comes out with no wet batter on it. (Baking time may vary depending on the pan size you use, so keep an eye on them.)
- Step 10Allow the bars to cool before lifting the parchment paper from the pan and slicing them into 12 squares.
